Sunny, spring days and warmer weather are finally here! Celebrate by whipping up these simple and delicious lemon bars. This classic southern staple is sure to light up any day.
Ingredients:
Crust:
- ¾ cup butter
- ½ cup white granulated sugar
- 1 tsp lemon zest
- A pinch of salt
- 1 tsp vanilla extract
- 2 cups all-purpose flour
Lemon Filling:
- 1 ½ cups white granulated sugar
- 3 tbsps all-purpose flour
- ½ tsp salt
- 2 tsp lemon zest
- 4 eggs
- ¾ cup freshly squeezed lemon juice
- 1 tbsp powdered sugar (plus extra for topping)
Directions:
Begin by generously coating a 9x13 baking dish with non-stick cooking spray and preheating the oven to 325 F.
Completely melt the butter for the crust then allow to cool. Meanwhile stir together the sugar, salt, lemon zest, and vanilla in a medium bowl until the ingredients are well incorporated. Stir in the flour and cool melted butter until a crumbly dough forms.
Press the dough evenly into the bottom of the baking dish then use a fork to poke holes all over. Freeze the dough for approximately 5 minutes. Remove from the freezer and immediately put in the oven to bake for about 25 minutes until the crust starts to brown.
While the crust bakes, combine all of the ingredients for the lemon topping in a large mixing bowl. Wisk the mixture until it is completely smooth.
Once the crust is golden brown, remove from the oven and increase the oven temp. to 350 F. Gently pour the lemon filling evenly over the crust then immediately return to the oven to bake for another 20 minutes until the lemon filling is firm.
Remove from the oven and allow to cool. Cut into squares (approx. 24) and sprinkle with powdered sugar.
